ruby-exif is:

ruby-exif is a library for parsing, editing, and saving EXIF data. You can retrieve useful information from EXIF tags contained in images created by recording equipments(for example, digital camera).

ruby-exif provides a simple interface to this library.

To uninstall only the ruby-exif package we can use the following command:

sudo apt-get remove ruby-exif

To uninstall ruby-exif and its dependencies that are no longer needed by Ubuntu 18.04, we can use the command below:

sudo apt-get -y autoremove ruby-exif

To remove ruby-exif configuration and data from Ubuntu 18.04 we can use the following command:

sudo apt-get -y purge ruby-exif
