python3-nbsphinx is:
nbsphinx is a Sphinx extension that provides a source parser for *.ipynb files. Custom Sphinx directives are used to show Jupyter Notebook code cells (and of course their results) in both HTML and LaTeX output. Un-evaluatednotebooks, i.e., notebooks without stored output cells, will be automatically executed during the Sphinx build process.
This package installs the library for Python 3.

If you want to follow this method, you might need to install aptitude first since aptitude is usually not installed by default on Ubuntu. Update apt database with aptitude

How To Uninstall python3-nbsphinx on Ubuntu 18.04
To uninstall only the python3-nbsphinx
package we can use the following command:
sudo apt-get remove python3-nbsphinx

To uninstall python3-nbsphinx
and its dependencies that are no longer needed by Ubuntu 18.04, we can use the command below:
sudo apt-get -y autoremove python3-nbsphinx
